Chicken Casserole

Ingredients

  1. 2 tbsp Butter
  2. 100 g Carrots (chopped)
  3. 240 g Chicken Breast (diced)
  4. 40 g Onions (chopped)
  5. 80 g Pumpkin (chopped)
  6. 2 g Salt and Pepper (to season)
  7. 1 whole Ultra Lite Chicken Sachet (Or Chicken Stock Cube)
  8. 2 tbsp Water

Instructions

  1. Preheat oven to 180ºC (350ºF).
  2. Melt butter in a saucepan or pan. Add chicken for 2 minutes or until lightly browned.
  3. Add the rest of the ingredients to the saucepan/pan (including chicken sachet/stock) and fry for 3-4 minutes.
  4. Pour all ingredients into a casserole dish and stir through water, bake covered for 45mins, checking every 20 minutes to see if more water is needed.
