Ingredients
50 g
Almonds (chopped)
1 tbsp
Coriander (fresh)
60 g
Grape Tomatoes (halved)
40 g
Lebanese cucumber (sliced diagonally)
1 tbsp
Mint
125 g
Slim Noodles (wok ready)
Instructions
Dressing:
Whisk lemongrass, chilli, lemon and lime juice together
Thai Noodle Salad:
Prepare the Slim noodles as per packet directions, drain and place in a bowl.
Add cucumber, tomato, mint and coriander to noodles
Toss gently to combine, sprinkle almonds over and serve.
