Ingredients
2 tsp
Cajun Spices
120 g
Chicken breast (cut into strips)
60 g
Cos Lettuce
80 g
Green Capsicum (cut into lengths)
2 tsp
Olive Oil
80 g
Zucchini (sliced thinly lenghtways)
Instructions
Sprinkle chicken with cajun spices, and brush with olive oil.
Grill chicken strips for 5 mins, then add zucchini and capsicum slices for a further 5-10 minutes or until chicken is cooked through.
While that's cooking, mix together dressing ingredients in a small bowl or jug, and set aside.
Place bed of cos lettuce onto two plates. Evenly top with grilled chicken and vegetables, and drizzle over dressing.
